Blueberry Streusel Cake

 

My husband definitely did not marry me for my cooking, but the baking is an entirely different story - I love to bake.

 

There was a time when I actually hated baking, mainly because it involved my kids wanting to "help"; that was definitely a deterrent for a few years... Now that they are old enough to either bake themselves or help for realz, we whipped up a few yummy things lately, like this Blueberry Streusel Cake.

And it goes like this:

 

*all ingredients should have room temperature*

  • 125 g butter
  • 400 g flour
  • 3 teaspoons baking powder
  • 300 g sugar
  • pinch of salt
  • 4 eggs
  • 50 ml milk

 

melt the butter, then add flour, baking powder, sugar, salt, eggs and milk; mix well until the dough is smooth (it'll actually be more a batter than a dough).

Spread the dough in a baking pan (app. 10"x15"). Top with blueberries (about 3-1/2 cups).

 

Now make the streusel:

  • 300 g flour
  • 200 g butter
  • 125 g sugar
  • 1/2 package of vanilla sugar

melt the butter and mix all the ingredient together until crumbly. Crumble over top of the cake (don't make the crumbles too small).

Bake at 360 F for about 40 min. (could be a few minutes more or less, depending on what kind of baking pan you use).
